Healthy Chocolate Pudding Pie

This recipe is made with a gluten free, oat flour crust, gelatin based pudding filling, home whipped cream topping, and strawberries. Like any recipe you will find on this site, this pie does not contain a single drop of refined sugar.

Healthy Chocolate Pudding Pie


    For the crust:
  • 1 1/4 cups oat flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 2 tablespoons olive oil
  • 5 tablespoons water
    For the filling:
  • 2 cups raw whole milk
  • 1 1/2 tablespoons unflavored gelatin
  • 1/2 cup cocoa powder
  • 1/4 honey
  • 1 teaspoon vanilla extract
  • pinch of sea salt
  • 1 cup raw whipping cream
  • 1/8 cup pure maple syrup
  • 5-6 strawberries, sliced


  1. Preheat oven to 350 degrees Fahrenheit
  2. Oil a 9" pie plate (or any baking dish, I once used a square glass pan and it turned out great!).
  3. Mix all ingredients in a medium sized bowl.
  4. Work dough with your hands and flatten out on a floured surface (oat flour).
  5. Roll out dough and place into your greased pan.
  6. Bake for 20 minutes.
  7. Let cool completely. Generally takes about 30 minutes to an hour to cool.
  1. Combine 2 tablespoons of milk with gelatin and set aside.
  2. Whisk together remaining milk, cocoa powder, honey, vanilla, and sea salt in a medium sized pan.
  3. Bring to boil, remove pan from heat.
  4. Whisk in your gelatin/milk mixture.
  5. Pour into a bowl and refrigerate for about 30 minutes.
  6. Once slightly cooled, mix well with fork and pour over your cooled pie crust.
  7. Place your pie into the refrigerator while you prepare your whipped topping.
  1. Place whipping cream and maple syrup into a bowl and blend with a hand mixer until a whipped cream consistency is reached. Make sure not to over-whip! Once it has happened, there is no going back.
  2. Evenly spread your whipped cream over the top of your pie and line the perimeter with your strawberry slices.
  3. Chill for about 2 hours.
  4. Enjoy!
